Baked Flathead

Ingredients
8 Medium - Large Potatoes
3 Red Onions
2 Tomatoes
2 tsp Crushed Garlic
1 tsp Seeded Mustard
Zest of 1/2 Lime
800g South Australian Flathead - Available Here
150mls Olive Oil
Salt n Pepper
Method
1/4 the potatoes and tomatoes
Cut the onions into wedges
Put potatoes, tomatoes, and onions into a small bowl add lime zest, olive oil, salt n pepper mix well.
Spread out on baking tray lined with baking paper
Cook at 220C for 20 mins
Lay Flathead fillets on top and cook for further 6 mins
Serve with a squeeze of lime juice over the top
